Healthier Chicken Parmesan


Hello there! So today I wanted to finish some boiled chicken thighs I had on my fridge and I decided to prepare a new recipe of my own inspiration that is easy to make and tastes awesome. I am talking about preparing a turnaround of the classic chicken parmesan in a healthier version: in a skillet and with no breadcrumbs, so we are also talking about less dirty dishes plus consuming less electricity (you can thank me later).

I didn’t wanted to use the oven and I wanted to save the calories of the breadcrumbs, so I prepared it saving some money too. I’m going to describe the recipe starting from zero, but if you already have cooked chicken, you can skip the first part. You might also want to have some cooked pasta, like spaguetti, rotini or whichever pasta noodles you have on hand. Just follow the package instructions until your pasta is al dente.

  1. 4 chicken thighs skinless and boneless
  2. 1 can of diced tomatoes
  3. 1 can of diced carrots
  4. 8 oz of sour cream
  5. 1 tablespoon of olive oil
  6. 2 slices of onion, chopped
  7. 2 cloves of garlic
  8. 1/4 cup of skim milk
  9. parmesan cheese
  10. black pepper
  11. bay leaves
  12. thyme
  13. oregano
  14. basil
  15. cilantro
  16. salt
  1. Cooking the Chicken
  2. Fill a pot with 3 cups of water to prepare 4 thighs, if you want to prepare more, adjust quantities. Toss your skinless boneless thighs in the pot, a table spoon of salt, the slice of onion, the garlic.
  3. When it breaks to a boil, add two stems of cilantro. Let it boil until the chicken is tender.
  4. After 25 min remove from the stove.
  5. Drain the broth in a separate container and keep it for a future recipe by freezing it. Here there's no waste, just remove the onion, garlic and cilantro and toss them in the trash can.
  6. Now you should have your chicken ready, you can chop it or shred it, however you want.
  7. For the Chicken Parmesan in a skillet with no breadcrumbs
  8. In a skillet pour the olive oil, the other slice of onion thinly chopped, the other garlic clove thinly chopped and saute it til the onion looks transparent.
  9. In the meantime pour the diced tomatos, the diced carrots, the milk and the sour cream in a blender or food processor and blend til the mixture has a uniform creamy red color.
  10. Add the cooked onion and garlic and give it a second blend.
  11. Pour everything in your skillet including the mixture you just blended.
  12. Add one bay leave, a pinch of oregano, a pinch of thyme, a pinch of basil, black pepper, salt and let it simmer until it starts boiling.
  13. Add the parmesan cheese and taste to check the flavor.
  14. Add the chopped or shredded chicken to your skillet.
  15. Serve.
  1. You can serve in a bed of pasta.

Voilá! you are all set!
